Vinegar Shortage Bites Global Food Industry, Sushi Restaurants and Salad Dressing Makers Scramble

A significant shortage of high-quality rice vinegar, a critical component for sushi rice and many Asian-inspired salad dressings, is causing headaches for chefs and food producers globally. The shortage, stemming from poor rice harvests in key regions and skyrocketing logistics costs, has led to price increases of over 70% for premium brands.

Sushi chefs, for whom the perfect balance of vinegar, sugar, and salt in sushi-meshi is non-negotiable, are feeling the pinch most acutely. Many are being forced to reformulate recipes or absorb massive cost increases. The ripple effect is being felt in factories that produce compound seasonings, where vinegar is a key acidulant. “We’re exploring alternatives like apple cider vinegar, but it changes the authentic flavor profile,” admitted a representative for a major salad dressing brand. The crisis has highlighted the fragile supply chains behind everyday condiments like vinegar and sesame oil, another product recently affected by climate and trade issues.
